Ingredients:
4 Roma tomatoes, chopped
1/2 Yellow Pepper, chopped
1-2 cloves garlic, minced
1 very large handful fresh spinach leaves or 1/2 cup frozen spinach
2 tablespoons fresh, chopped sage, or 2 tsp. dried
2 tablespoons fresh, chopped basil, or 2 tsp dried
2 tablespoons fresh, chopped basil, or 2 tsp dried
1 tablespoon fresh, chopped thyme, or 1 tsp. dried
Salt and Black Pepper to taste (Don't be afraid to use a lot of pepper)4 -6 cups Vegetable or Chicken Stock
1/2-3/4 cup Lentils
1/2 cup dry, red wine (optional)
1. Chop all ingredients and put in a 5 quart pot.
2. Let simmer for approximately 30 minutes, or until lentils are soft enough to eat.
